Easy 15-Minute Pumpkin Spice Donuts

These pumpkin spice donuts will melt in your mouth! They can be made in minutes and are a perfect treat to whip up for the holidays. Guests love them and they’ll add a spirited sense of joy to any household for the holidays!

Ingredients:

  • 2 tbsp. melted butter
  • 3 tbsp. milk
  • 1 tbsp. corn syrup
  • 3 tbsp. dry pumpkin pie spice pudding mix
  • 1 cup powdered sugar
  • 2 cups canola oil, for frying
  • 1 8-ct package refrigerated biscuit dough

Recipe:

  1. Pour 2 cups of canola oil into a medium sized saucepan and begin heating on medium-low heat.
  2. Open the dough and separate each biscuit. Use a biscuit cutter or a soda bottle cap to cut out a small circle in the center of each biscuit.
  3. 1. Combine butter, milk, and syrup in a small bowl. Whisk in pumpkin spice pudding mix and powdered sugar until smooth. Glaze will set up, so return it to the microwave if needed to soften and whisk smooth again.
  4. Use a meat thermometer to check the temperature of the oil. It should read 350 degrees Fahrenheit. Increase heat gradually if necessary. Once oil is ready, drop donuts in, and let cook for about 2 minutes. Then turn and cook an additional 2 minutes on the other side. (The cooking process goes by very quickly so have a paper towel covered plate nearby to set the donuts on after they are finished being cooked. They should be a nice golden brown.
  5. Let the donuts cool for a few minutes, then whisk the glaze to make sure it’s smooth enough to dip each donut. Dip the donut, and immediately turn the glaze side up on the cooling rack.
  6. Repeat this process until all donuts are fried and glazed. They are best eaten within the hour, but they’re even good to eat the next day!

Holiday Chia Brunch Bowls

These strawberry chia brunch bowls are perfect little appetizers to serve during the holidays. They’re a delicious and healthy option, and guests love them! You can also prepare them the night before your season celebrations, so you won’t have to worry about assembling them the day of!

Ingredients:
For the Strawberry Chia layer:

  • 1/3 cup chia seeds
  • 7 large strawberries
  • 50 ml of coconut milk
  • 50 ml of water
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey
  • Pack of granola (Choose your favorite or make your own)
  • 1 tub of full-fat vanilla yogurt
  • Fresh pomegranate seeds and your favorite berries on top
  • Fresh mint
  • Coconut chips
  • 8 serving glasses

Recipe:

  1. Prepare your strawberry chia layer the night before. Put the strawberries, coconut milk, water, vanilla extract, and honey in a blender. Blend until smooth
  2. Pour the blended mixture on top of the chia seeds in a bowl and whisk well to combine.
  3. Allow to stand for 10 minutes, refrigerate to firm overnight.
  4. In the morning, take it out of the fridge and whisk again. Add a little extra water if necessary.
  5. Spoon your strawberry chia layer into the bottom quarter of each serving glass. Be careful to keep the sides of the glass clean and wipe away any drips with a paper towel.
  6. Now add enough granola to fill the glass half way.
  7. Next, add the yogurt layer until it fills each serving glass three quarters of the way.
  8. Finally, add your pomegranate and berry layer, and garnish with fresh sprigs of mint and coconut chips.
